Bisa Sebabkan Kanker, 6 Makanan Ini Tak Boleh Dipanaskan Kembali

Jakarta, era.id - Memanaskan menjadi salah satu cara untuk membuat makanan yang sudah dingin, segar lagi saat disantap. Namun, tahukah kamu ada beberapa jenis makanan yang menghasilkan zat beracun saat dipanaskan ulang dan berdampak buruk bagi kesehatan. 

"Tak semua jenis makanan bisa dipanaskan lagi. Jangan pernah memanaskan ulang makanan berprotein tinggi." ujar Ahli Nutrisi Lokendra Tomar.

Dikutip dari NDTV Food pada Selasa (16/6/2020), berikut makanan yang tak boleh dipanaskan kembali.

1. Sayuran dengan nitrat jumlah tinggi

Jika kamu memiliki bayam atau sayuran berdaun hijau, wortel, lobak atau  seledri sebaiknya jangan dipanaskan kembali. Sayuran kaya nitrat ketika dipanaskan lagi bisa menghasilkan racun, karena bersifat karsinogenik.

Bayam mengandung zat besi dalam jumlah besar. Memanaskan sayur dengan nitrat jumlah tinggi dapat mengoksidasi zat besi yang ada dalam bayam. 

Oksidasi zat besi menghasilkan radikal bebas yang bisa menyebabkan banyak penyakit termasuk infertilitas dan kanker.

2. Nasi

Kamu mungkin terkejut, jika nasi juga termasuk dalam deretan ini. Menurut Badan Standar Makanan (FSA) Inggris, seseorang bisa mengalami keracunan saat mengonsumsi nasi yang dipanaskan ulang. 

Hal ini disebabkan adanya bakteri Bacillus Cereus. Jika nasi dipanaskan dan ditinggalkan di suhu kamar, maka dapat menghasilkan spora yang dikandungnya dapat berlipat ganda. Hal ini bisa menyebabkan keracunan saat mengonsumsi nasi yang telah dipanaskan kembali.

3. Telur

Telur merupakan sumber kaya protein yang menyebabkan keracunan ketika dipanaskan berulang kali. Setelah memasak telur, kita harus segera mengonsuminya. 

Tetapi jika disimpan dalam waktu lama, jangan dipanaskan lagi. Mengonsumsi telur yang dipanaskan mengandung banyak nitrogen. Jika dipanaskan, nitrogen menghasilkan zat karsinogenik yang berisiko terkena kanker.

4. Ayam

Memang menyantap ayam saat panas memang terasa begitu enak. Jika kamu menyimpan dan memanaskannya berulang bisa menghasilkan zat beracun. Ayam mengandung protein yang bisa menyebabkan masalah pada sistem pencernaan jika dipanaskan kembali.

5. Kentang

Kentang menjadi makanan pokok yang terbaik dan mudah untuk disimpan, dipanaskan, dan dikonsumsi. Sayangnya, kamu perlu berpikir ulang untuk memanaskannya. 

Kentang adalah makanan sumber kaya akan vitamin B6, kalium dan vitamin C. Namun, jika dipanaskan berulang-ulang, kemungkinan nutrisi dapat menghasilkan Clostridium Botulinum, yakni bakteri yang menyebabkan botulisme. 

Jika kamu membiarkan kentang yang sudah matang dalam suhu ruangan, pertumbuhan bakteri akan meningkat. Jika kamu ingin menghindari pertumbuhan bakteri, yang terbaik adalah membiarkannya disimpan di lemari es atau membuangnya jika tidak dikonsumsi dalam 1-2 hari.

6. Jamur

Sangat dianjurkan untuk makan jamur sesegera mungkin usai dimasak. Idealnya, tidak boleh disimpan terlalu lama atau dipanaskan kembali. Jamur mengandung protein dan mineral tinggi usai dipanaskan lagi.

Hal ini dapat menghancurkan protein didalam kandungan dan menyebabkan masalah sistem pencernaan. Maka dari itu, jamur yang dipanaskan kembali akan menghasilkan racun yang mengandung nitrogen teroksidasi dan radikal bebas yang nantinya berbahaya bagi kesehatan.
